Growing up in suburbia in a family that cooked instead of eating out, I have acquired a weakness for certain processed foods. Because I was exposed to them so early, I still love Velveeta, Cool Whip, and anything made with Bis-quick. I feel a bit guilty about this, even more so because I like to cook and bake, and I feel like I'm cheating.
Finally, I made biscuits that are as good as the store bought ones.
You know how the ones you make out of a pre-made Pillsbury roll always come out super flaky and buttery (well, at least butter-flavory)? I have been trying to make biscuits from scratch that do that.

I am tempted to post the entire recipe here, but I want you to go and check out the Blog where I found it. Bacon Press is kind of like food porn. As a bonus, he is right here in San Francisco.
The fine gentleman at Bacon Press is right when he says that you have to do it exactly as he says. I am finding more and more as I learn how to cook and bake that ihow you put the ingredients together is just as important as the ingredients themselves.
I did cheat a bit and use skim milk instead of whole milk, but it seems to have worked. Also, instead of a biscuit cutter, I used a drinking glass. You have to be careful with that, though. Glass Shard biscuits don't sound that tasty.
A trick I discovered, if you don't have a food processor or a pastry blender, is instead of cutting the butter into the flour with two knives, shred it with a cheese shredder. Of course, it has to be frozen for this to work, but that's how it is supposed to be.
Now I just gotta figure out how to make macaroni and cheese from scratch that is better than Mac n' Cheese with Velveeta. Maybe they would know here.
As an aside, I found this kind of interesting.
